Distillates and ageing: the undeniable value of time
The history of distillation is the result of a long journey through space and time, with its birth dating back to Mesopotamia in the 3rd millennium BC. From the Babylonian civilization, the original techniques were passed on to the Egyptians, inventors of the alembic, and then to the Arabs who, via Andalusia, brought it to 10th-century Europe. It is, therefore, a story of extended time and refinement processes: characteristics that are part of the distillation process itself, which finds its fullest expression in patient aging.
